Sommariva Rive di San Michele Conegliano Valdobbiadene Prosecco Superiore Extra Dry D.O.C.G

An extraordinary Superiore Extra Dry “Rive” Prosecco derived from the Glera grape, which is harvested by hand in the middle of September. The Prosecco is crisp, fruity and floral with a strong note of acacia flowers. It has a young fresh flavour that is intense and full-bodied. On the palate, the sensations are pleasant and harmonious with excellent persistence. The colour is a brilliant straw yellow enlivened by its perlage. This sparkling wine is perfect as an aperitif or with food. Ideally served at a temperature range of 7-9°C.

A Prosecco of the highest quality, Conegliano Valdobbiadene Superiore Prosecco D.O.C.G can only be made in the Treviso province of Veneto, located on the hills between the towns of Conegliano and Valdobbiadene (North Treviso). The vineyard slope is called Riva of San Michele, which is 200 meters above sea level. “Rive” in the title is a term only shared between 43 communes, which highlights its uniqueness.

Less than 10,000 bottles are made in this single-vineyard also known as a “Cru”, a French term which means that this particular vineyard and the grapes grown there have been isolated from all other vineyards due to their superiority.

The pressing takes place after the grapes are harvested by hand in the middle of September, gathered from the single vineyard and transported to the winery. It’s accomplished by sophisticated equipment which presses the grape very gently so only the free-running juice from the heart of the berry is extracted. After the pressing, the turbid must is left to rest in stainless steel tanks and chilled to a temperature of 50°F (10°C). After approximately 10-12 hours, the limpid part of the must is separated from the deposits and fermentation begins. The vinification takes about 15 days and is completed in stainless steel tanks kept at a constant temperature of 62-64°F (17-18°C). The limpid Prosecco still wine is foamed adding specially selected yeasts and the right quantity of sugar needed to obtain the required amount of bubbles. The whole process takes about 20-25 days at a constant temperature of 55-58°F (13-14°C), once sparkling is obtained it is chilled at 25°F (-4°C) for 3 days, it is then filtered and bottled.
